Adam & Eve were not created mortal in their original state & original holiness they were both "cloth with the Light". St.Augustine teaches they were not subject to corruption.

But they weren't inherently created with immortality. God gave them immortality through the Tree of Life, but then withheld its fruit from them after they ate from the Tree of Knowledge of Good and Evil.

At the end of times, there will be a Resurrection (1038), a Final Judgement (1039), and then a new Earth (1042). CCC 1045 differentiates this state from the original Adam & Eve state, by saying, "For man, this... will be the final realization of the unity of the human race, which God willed from creation."

Adam & Eve have the Tree of Life for immortality, St.Paul have the Holy Eucharist for immortality as Jesus promised eternal life to those who eat His body and drink His blood? John6:53-55
