Also consider clarifying some things. You used catholic with a little 'c,' does this mean you are prepared to accept answers from non-Roman Catholic perspectives? For instance, I'm Orthodox and we use icons in our worship, but if you are only looking for Roman Catholic perspectives then I will not be able to answer from our unique viewpoint.

I voted this up and gave you the bounty for putting forth the effort. Your answer is essentially correct, although I would love to see more elaboration before marking it as accepted (especially on the notion of 'canonical' administration of the Holy Mysteries). I've been discussing this with a bunch of Orthodox folks, so I think I have a better handle on this now. With your permission, I may even edit your response slightly to add some of the other information (but not if you don't want me to, I can just create my own answer if so).

@Caleb I meant in the sense of declaring an official canon. I put canon in parentheses when I used it in that sense. I will try to clarify. I come from a tradition that has never drawn up an official canon nor closed it

@fredsbend a lot of modern pseudo-scholarship is done on Gnostic gospels, it's pretty pitiful

@fredsbend they were written during this time period - it's just that they don't become the topic of controversy until recently because most everyone back then knew the books were Gnostic and weren't written by the authors they claimed to be written by ;)
